It seems like every week or two a new restaurant or bar opens on the Las Vegas Strip. This week, four new dining spots opened just in time for the new year. The new restaurants are at Caesars Palace, Planet Hollywood, Flamingo and Four Seasons Hotel at Mandalay Bay.
Caspian’s Rock & Roe (or Cocktails & Caviar)
Caspian’s Rock & Roe at Caesars Palace Resort & Casino is a rock and roll speakeasy-inspired venue that offers the perfect mix of exclusivity, high-end indulgence, and world-class entertainment. It features a stunning caviar bar that elevates the entire experience with the finest caviar and freshest seafood.
They are currently using two names on signs and on the internet. Rock & Roe and Cocktails & Caviar. They need to fix this. Caspian’s was built in the former Cleopatra’s Barge space and is operated by Clique Hospitality.

Caramella Italian Restaurant
Caramella was built in the former Koi Japanese restaurant space on the Mezz Level near the Criss Angel Theater and is operated by Tao Group Hospitality.

Gordon Ramsay Burger
The 8,000 square-foot restaurant features a large exhibition kitchen, island-style bar, multiple dining zones, Union Jack accents and dynamic flame displays throughout. They use only the freshest, highest-quality ingredients, and their beef patties are grilled over an open flame with hardwoods for an exceptional flavor.
Gorden Ramsay Burger was built in the former Bird Bar space and is operated by Caesars Entertainment.

Bourbon Steak
Guests can savor elevated steakhouse favorites infused with global flavors, all paired with an exceptional beverage program featuring an extensive selection of wines and spirits.
